Born in Kyoto Japan, Tatsu Nishino has been cooking since his teens and attended Nihon Chorishi Gakko (The Japanese Culinary School) in Osaka, Japan.

After moving to Los Angeles in 1985 Tatsu started work in area Japanese restaurants until he ended up as chef at Matsuhisa – Nobu Matsuhisa's original Los Angeles restaurant.

Tatsu and his wife Eri moved to Seattle in 1995 to open Nishino in Madison Park. Tatsu's style brings innovation and excitement to a cuisine that is grounded in centuries of tradition. Nishino's food is fresh but remains soulful and authentic.
