Chef Tatsu Nishino, born and raised in Kyoto, Japan, discovered his passion for cooking as a teenager. He trained at the prestigious Nihon Chorishi Gakko in Osaka, and his culinary journey eventually led him to Los Angeles, where he refined his skills at some of the city’s top Japanese restaurants, including a position as a chef at the renowned Matsuhisa.

In 1995, Tatsu and his wife Eri made Seattle their home, bringing with them a deep love for Japanese cuisine and culture. At Nishino, we combine centuries-old traditions with creative, modern touches to offer fresh and soulful dishes. We are honored to welcome you into our Japanese cuisine.
